Job Overview

As a key member of our culinary team, you will be responsible for leading a small team of cooks and kitchen staff to deliver exceptional dining experiences for our resort guests. Our fully licensed bistro, Galleons, is a hub of activity, serving breakfast, lunch, and dinner to a diverse range of customers.

Key Responsibilities
  • Lead a kitchen team with clarity, direction, and enthusiasm, ensuring seamless execution of menu items and exceptional customer service.
  • Collaborate with our Resort Manager and Food and Beverage Manager to develop and implement menu offerings that meet customer preferences and company guidelines.
  • Manage food preparation, cooking, and presentation to ensure consistency and quality.
  • Effective management of the department roster, including scheduling and staff development.
  • Implement waste reduction and cost-saving initiatives to optimize menu offerings and food costs.
  • Source local ingredients and cook fresh to deliver unique and exciting dining experiences.
  • Liaise with food service and restaurant management to ensure seamless customer service and kitchen operations.
  • Maintain a safe and hygienic working environment, adhering to proper storage and handling procedures.
  • Conduct daily temperature checks and record assessments as necessary.
Requirements
  • A formal qualification in commercial cookery is highly desirable.
  • Previous experience in a lead or head position in a restaurant, club kitchen, resort, or bistro is essential.
  • Leadership experience in supervising other cooks and kitchen staff is required.
  • A working understanding of food safety principles and workplace health and safety is essential.
  • Experience in ordering and stock control is necessary.
  • Effective verbal communication skills are required.
  • A willingness to be part of a team and contribute to the success of the resort.
