Job Summary

We are seeking a highly skilled and experienced Head Chef to lead our culinary team at Galleons Bistro. As a key member of our resort's management team, you will be responsible for delivering exceptional dining experiences to our guests.

Key Responsibilities
  • Lead a high-performing kitchen team with a focus on quality, safety, and efficiency.
  • Develop and implement menus that showcase modern Australian cuisine and meet customer preferences.
  • Manage food costs, inventory, and ordering to ensure consistent menu availability and optimal profitability.
  • Collaborate with the Resort Manager and Food and Beverage Manager to drive business growth and improve customer satisfaction.
  • Maintain a safe and hygienic working environment, adhering to company guidelines and regulatory requirements.
  • Recruit, train, and develop a talented team of cooks and kitchen staff.
  • Monitor and control waste, portion sizing, and menu preference offerings to minimize costs and maximize customer satisfaction.
  • Conduct daily temperature checks and maintain accurate records.
Requirements
  • A formal qualification in commercial cookery or equivalent experience.
  • Proven leadership experience in a senior kitchen role, with a track record of success in managing high-performing teams.
  • Strong understanding of food safety principles and workplace health and safety regulations.
  • Effective verbal communication skills and ability to work collaboratively with colleagues and stakeholders.
  • Ability to work in a fast-paced environment and adapt to changing circumstances.
