About the Role

We are seeking a skilled Culinary Team Leader to enhance our culinary offering and mentor a team of chefs at Rydges World Square. As a key member of our kitchen team, you will be responsible for assisting the Executive Chef in promoting their culinary vision, maintaining a high level of cleanliness and presentation, and ensuring exceptional guest experiences.

Key Responsibilities

  • Assist the Executive Chef in promoting their culinary vision and mentoring a team of chefs.
  • Liaise with other hotel departments to ensure exceptional guest experiences.
  • Maintain a high level of cleanliness and presentation, keeping all work areas clean and in working order.
  • Evaluate recipes to determine pricing for menu items, considering food, labor, and overhead expenses.
  • Prepare and cook various types of food in large quantities, either regularly or for special events.
  • Develop menus based on customers' preferences.
  • Conduct inspections of facilities and equipment to ensure compliance with regulations.
  • Requisition stock, materials, supplies, or equipment.
  • Recruit and hire staff, including cooks and other kitchen workers.
  • Schedule employee work hours by coordinating activities.
  • Supervise and coordinate activities of cooks and workers engaged in food preparation.
  • Demonstrate new cooking techniques and equipment to staff.
  • Inspect supplies, equipment, and work areas to ensure conformance to established standards.
  • Consult with customers to plan menus for special occasions.
  • Enforce OH&S and hygiene regulations.

Requirements

  • Ability to work a variety of shifts and flexibility with hours.
  • Previous hotel experience is preferable.
  • Experience working in a fast-paced, high-pressure kitchen environment while leading a team in a friendly and comfortable atmosphere.
