Executive Chef

Mulpha Restaurant Pty Ltd & Caldisc Pty Ltd are seeking an experienced Sous Chef to join the team at Edgewater Dining, a renowned Gold Coast restaurant. As a key member of the kitchen team, you will assist the Head Chef in ensuring the highest quality and consistency of food, while also contributing to the development of the menu and achieving desired gross margins and customer satisfaction.
Key Responsibilities- Support the Head Chef in daily operational planning, development, implementation, and leadership of the kitchen to achieve budgeted revenue, labour, and financial targets.
- Lead kitchen services, including overseeing and managing food quality and consistency, and working within any section as needed.
- Partner with the Head Chef to continually develop the menu to achieve desired gross margins and customer satisfaction.
- Assist the Head Chef with inventory management, including ordering, and minimising food waste and establishing waste control measures.
- Ensure stock rotation and the organised and hygienic storage of food.
- Develop chefs and kitchen hands to increase skills and ability, including providing quality and ongoing training within the kitchen.
- Ensure compliance in food safety and hygiene standards and be a key contact for any health-related inspections and audits.
- A love of food and a drive for excellence.
- A great attitude and attention to detail.
- Exceptional communication skills & work ethic.
- A positive and proactive attitude and team focus.
- Creative flair and willingness to learn and teach.
- Ability to lead a team and manage service in the absence of the Head Chef.
- Certificate III in Commercial Cookery or equivalent.
- Prior experience in a similar role.
