Our club restaurant celebrates the beauty of our surroundings and is committed to sourcing the freshest local ingredients and delivering unforgettable dining experiences against the backdrop of breathtaking Wallis Lake views. We are set to elevate our seafood offerings, now holding a Fish Receivers’ licence to source seafood directly from fishermen.

Role Responsibilities:

- Act as head chef in the absence of the Head Chef, leading a team of over 15 in a fast-paced, high-volume kitchen.
- Collaborate with the Head Chef to develop and execute seasonal menus highlighting the freshest local ingredients.
- Lead and inspire passionate cooks to maintain high culinary standards and ensure smooth kitchen operations.
- Oversee food preparation, cooking, and presentation to deliver exceptional dining experiences.
- Monitor inventory levels, manage food costs, and contribute to menu planning and development.
- Uphold health and safety standards, including proper food handling and sanitation practices.

Requirements:

- Proven experience as a Sous Chef in a high-volume, quality-driven restaurant environment (minimum 12 months).
- Strong culinary skills and a passion for creating innovative dishes using seasonal ingredients.
- Leadership abilities with the capacity to motivate and mentor kitchen staff.
- Excellent communication and organizational skills, thriving in a fast-paced environment.
- A commitment to sustainability and supporting local food producers.
- Relevant culinary qualifications and training.
