Overview
Darwin — Elevate your career to a Higher Altitude. Are you an experienced Executive Sous or Head Chef looking to showcase your creative culinary skills and drive the day-to-day operations of a busy kitchen? A full-time opportunity is available for an experienced and qualified Executive Sous Chef to join the Flight Catering team at our Darwin Airport facility.
Responsibilities
Drive food quality across all meal classes with a strong focus on the client end product
Manage menus and specifications on behalf of our Airline partners
Direct day-to-day food preparation and meal presentation
Monitor flight schedule forecasts and changes to the weekly production plan
Review productivity, processes and quality to identify opportunities for improvement
Mentor and develop employees across Line Chef, Leading Hands and Supervisors
Deliver consistent look, taste and portion size quality that aligns with customer specifications
Maintain the company policies related to HACCP and WHS
Assist with internal and external audits
Manage waste and control costs
Support the Unit Manager with operational, strategic and project planning goals
Collaborate with Corporate Culinary, Menu Planning and Procurement teams to build capability within the Darwin unit
Qualifications
Trade qualified (Cert III) with experience at Senior Sous level or higher
Experience in large or bulk catering facilities in manufacturing or FMCG
Previous Airline Catering experience preferred but not required
Demonstrated Six Sigma or Lean manufacturing principles an advantage
Ability to manage a diverse cross-functional team
Strong verbal and written communications skills
Excellent time management skills and ability to meet deadlines
Strong understanding of HACCP, Food Safety, WHS and QA
