About the Business

Hane Sushi is a licensed, formal dine-in Japanese restaurant with full table service located in Eatons hill Village, on the north side of Brisbane. Since opening in 2017, we have built a strong reputation for serving authentic Japanese cuisine, including Donburi, Sashimi, Salads, Sushi, Desserts, and beverages including beer and wine.

About the Role

We are seeking an experienced Cook to join our team on a full-time basis. The successful candidate will have proven expertise in preparing and cooking authentic Japanese dishes, with an understanding of local dining preferences.

Key Duties and Responsibilities

The duties of the role will include, but are not limited to:

  • Preparing, seasoning, and cooking a variety of Japanese dishes such as Donburi, Sushi, Sashimi, and hot dishes to a high standard.
  • Coordinating food preparation and cooking schedules to ensure timely service in a formal dine-in environment.
  • Inspecting and storing food supplies and ingredients to ensure freshness and compliance with food safety standards.
  • Monitoring kitchen operations to ensure compliance with workplace health and safety and sanitation requirements.
  • Assisting in training and guiding kitchen hands and junior staff.
  • Assisting in maintaining stock levels, placing orders with suppliers, and supporting cost control and quality standards under the direction of management.
  • Assisting in menu planning and seasonal specials by providing input and preparing trial dishes as directed.
  • Ensuring the upkeep of kitchen equipment and assisting in arranging for repairs and maintenance when required.
  • Collaborating with management and front-of-house staff to deliver consistent customer satisfaction.
  • Assisting in handling customer feedback regarding food quality in a professional manner.

Skills and Experience

To be considered for this role, you will need to demonstrate:

  • Certificate 4 in cookery
  • Strong knowledge of Japanese cuisine and cooking methods.
  • Relevant trade qualifications are highly regarded.
  • Ability to work effectively in a team, with strong communication and interpersonal skills.
  • High attention to detail, time management skills, and the ability to perform under pressure in a busy kitchen.
  • Commitment to food quality, presentation, and hygiene standards.
