This is a career-defining opportunity to lead and shape the culinary program across an entire hotel, overseeing multiple venues under one roof. Each space is designed to reflect Melbourne's layered food culture while introducing something fresh and exciting. From signature restaurants and cocktail bars to rooftop dining, in-room service, and bespoke events, you'll set the tone for a new standard of hospitality in Melbourne.
Your responsibilities will Include:
- Designing and delivering innovative menus that celebrate Melbourne's produce and culinary heritage.
- Overseeing all kitchens across multiple venues and hotel outlets.
- Leading the events program, ensuring seamless execution for private functions, conferences, and large-scale occasions.
- Providing hands-on support in individual venues as needed.
- Driving kitchen operations including budgeting, supplier relationships, systems, processes, policies, and procedures.
- Leading, mentoring, and inspiring a diverse, high-performing kitchen team.
- Collaborating closely with The Mulberry Group and TFE Hotels to deliver a world-class guest experience.
About You
You're an experienced Executive Chef who thrives on creativity, scale, and leadership. You bring:
- Extensive senior leadership experience in award-winning restaurants, luxury hotels, or multi-outlet operations.
- A produce-driven, contemporary food philosophy with a strong eye for detail and originality.
- A proven track record of building and retaining exceptional kitchen teams.
- Strong financial acumen and operational management skills, including HACCP and food safety practices.
- A guest-first mindset—crafting menus and experiences that resonate with both locals and international travellers.
