Lead the food experience at Footy Park Precinct

The Footy Park Precinct at West Lakes is a vibrant, multi-faceted destination, home to the SANFL High Performance Centre, Mosaic Hotel, X-Golf, Hey Caddy, and a range of community and sporting facilities. As a hub for sports, hospitality, and events, the precinct delivers outstanding experiences for guests, athletes, and the local community, with a strong focus on innovation, quality, and engagement.

About the Role

As Head Chef, you will be a key member of the Mosaic Hotel Management team, driving the food brand and culinary excellence across the precinct's venues and functions. This hands-on Head Chef role is based in our Mosaic Hotel responsible for menu development, kitchen management, and will be support our precinct development with a new beer garden and function offerings.

The role forms part of our precinct management team working closely with venue and marketing leads playing a pivotal part in shaping the precinct's food offering, ensuring high standards, profitability, and memorable customer experiences.

Key Responsibilities

  • Menu Development & Quality: Design and deliver high-standard, seasonal menus that reflect the precinct's brand and meet profitability targets. Oversee menu presentation, stock control, and promotional offerings for events and special occasions.
  • Kitchen Leadership: Lead, train, and coordinate kitchen staff, fostering a values-based culture and maintaining excellent hygiene and safety standards. Manage rostering and staff performance within agreed budgets.
  • Operational Excellence: Prepare accurate budgeting (COGS and Wages), and ensure effective food service times. Maintain compliance with food safety and council regulations.
  • Team Engagement & Development: Drive team engagement, support upskilling, and provide ongoing training. Lead by example and ensure compliance with all legislative and WHS requirements.

Person Specification

  • Relevant trade qualifications and Food Safety Supervisor credentials.
  • Minimum 5 years' experience in pubs or restaurants, with proven success leading a bistro kitchen.
  • Strong understanding of function catering and kitchen management.
  • Outstanding communication, leadership, and financial acumen.
  • Up-to-date with culinary trends and optimised kitchen processes.
  • Proficient in MS Office, restaurant management software, and POS systems.
  • Credentials in health and safety training .
  • Ability to work under pressure, motivate and train staff, and deliver contemporary cuisine suited to our diverse clientele.
