Johnny's Green Room – Chef de Partie (pizza focus)

A rooftop bar with Italian-beach-club energy and sweeping views of the city skyline in inner-city Melbourne?  That would be Johnny's Green Room in Carlton, which has been pumping since its revamp and reopening a few months back.  And being the hottest venue in town means hot opportunities for those serious about making a career out of people having fun.

We are on the hunt for a Chef de Partie to work with the tight kitchen team at Johnny's Green Room (JGR).

A bit about the place

Johnny's Green Room is the perfect amalgamation of delish 'Italian party food' (by famed Karen Martini), cracker cocktails and laid-back tunes, all while watching the world go by on the Carlton streets below.   It's fun, easy and unpretentious, just like your approach to work.

The Role and responsibilities.

As the Chef De Partie, you will be working closely with the Head Chef.

We are on the hunt for a skilled chef de parties (pizza focus) to join our passionate kitchen team. You will be taking ownership of the pizza section, ensuring consistency, creativity and precision across our menu. From hand-stretching dough to firing perfect pizzas, you will bring energy and craftsmanship to every shift.

Responsibilities

· Take full responsibility for the pizza section- from dough preparation and fermentation to service execution

· Maintain and monitor dough quality, proofing schedules and oven management

· Ensure all pizzas meet taste, speed, and presentation standards during peak service

· Manage stock levels, ordering and portion control for pizza ingredients

· Uphold food safety, hygiene and cleaning schedules for the section

· Assist in service leadership- calling dockets, coordinating with other sections, and ensuring smooth pass operations when required

· Support head chef and sous chef in maintain kitchen standards, mentoring the team and ensuring consistency across shifts.

  • Are you Italian? ..... maybe not – but you will certainly know and love authentic Italian cuisine, and what you don't know, we will gladly teach you
  • You will love to work hard, in a calm and supportive environment
  • Strong knowledge of doughs, fermentation and oven techniques
  • Ability to lead a section independently under pressure
  • Strong communication, organisation and a genuine passion for Italian food
