Head Barista – Rustica Brighton

Rustica is a renowned Melbourne café & bakery group, celebrated for our specialty coffee, artisan bread, and vibrant hospitality. We're now seeking a skilled and passionate Head Barista to lead the coffee program at our Brighton café.

This is an exciting opportunity for an experienced coffee professional who thrives in a fast-paced environment, values consistency, and can lead a barista team to deliver outstanding coffee experiences every day.


What You'll Be Doing
  • Leading and inspiring the barista team to deliver consistently high-quality coffee.
  • Dialing in espresso, milk texturing, and overseeing filter brewing methods.
  • Training, mentoring, and developing baristas to maintain Rustica's coffee standards.
  • Managing workflow and quality control during busy service periods.
  • Maintaining, cleaning, and troubleshooting coffee equipment.
  • Assisting with stock management, ordering, and recipe development.
  • Engaging with customers to create a warm and welcoming café experience.

What We're Looking For
  • Minimum 3+ years' experience in specialty coffee.
  • Strong technical skills in espresso extraction, latte art, and grinder calibration.
  • Proven leadership or senior barista experience.
  • Knowledge of coffee machine maintenance and ability to troubleshoot issues.
  • Excellent customer service and communication skills.
  • Ability to work under pressure while maintaining quality and consistency.
  • A team player who brings positivity, professionalism, and passion for coffee.
