Farmer's Daughters is a vibrant three-story Melbourne CBD venue renowned for its homage to Gippsland produce and the essence of Australian campfire cooking. We pride ourselves on innovation and culinary excellence while celebrating the best regional Victorian produce.
The Role:
We are seeking a skilled and motivated Full-Time Sous Chef to join our dynamic kitchen team. In this pivotal role, you'll be responsible for leading by example, ensuring the maintenance of top-notch standards in food quality, hygiene, and presentation. Your role will involve managing a busy kitchen section, mentoring and developing our junior chefs, and upholding our high standards of operational efficiency.
Key Responsibilities:
- Assisting with the leadership and management of all kitchen operations.
- Assisting with the development of our junior chefs to nurture their skills and uphold our culinary standards.
- Ensuring the whole kitchen team maintain an exceptional level of food quality, hygiene, and presentation.
- Assist with the management of inventory, food costs, and staffing to optimise kitchen performance.
- Collaborating with the team to innovate and refine menu offerings while adhering to our commitment to Gippsland produce.
Skills & Requirements:
- Proven experience as a Sous Chef or similar role within a fast-paced fine culinary environment.
- Strong organisational skills with an eye for detail to maintain high standards.
- Excellent communication and leadership abilities to guide and inspire the team.
- In-depth understanding and commitment to Food Safety & Hygiene Practices.
- Passion for Gippsland produce and innovative culinary techniques.
- Kitchen: 2 years full time in the role, 5 years preferred
- Education: Certificate IV to Advanced Diploma (preferred).
Tasks of the role
- Planning menus, estimating food and labour costs, and ordering food supplies
- Monitoring quality of dishes at all stages of preparation and presentation
- Discussing food preparation issues with managers, kitchen and front of house staff
- Demonstrating kitchen techniques and advising on cooking procedures
- Preparation and cooking of food.
- Explaining and enforcing hygiene regulations
- Selecting and training kitchen staff
- Overseeing general kitchen operations.
