Karen Martini is seeking a highly skilled Chef's of all levels to lead our kitchen in its new iteration of a beloved South Yarra institution.
This is your chance to step into a senior (re)founding role at one of Melbourne's most exciting new Italian openings.
There is a focus on excellence and innovation with the backing of a structured, well-resourced organisation. This position would suit an enthusiastic and dedicated hospitality professional. The right candidate will be self-motivated, passionate and able to work within a team environment, achieving the highest standards.
What we're looking for
- A qualified Chef de Partie
- A qualified Pastry Chef de Partie
- Skilled Commis Chef's
The following skills will highly regarded
- Proven experience in Italian cuisine and experience with a wood-fire grill
- An interest in local providores and farmers
- A passion for Italian cooking culture
- The ability to work as part of a small team
- High standards in quality, consistency and presentation
- The ability to take direction and also work autonomously
- Have the flexibility to work weekends and public holidays
Your responsibilities
- Pack and organise stock, including demonstrating FIFO
- Prepare and serve a variety of high quality ingredients and dishes following a standard recipe
- Demonstrate skills to butcher a variety of seafood (including shellfish) and meats
- Work in a clean, safe and hygienic manner, following standard operating procedures
- Ensure all relevant health regulations are adhered including cooking, serving and storage
- Demonstrate a high level of knowledge of seasonality, produce and processing methods
