The primary role of the Restaurant Manager at Black Cygnet Hotels (t/a The Courthouse North Melbourne) is to provide a warm, genuine and well informed hospitality experience to our guests. Your success in this will assist the team in realizing our joint aim - to be recognized as the best pub in Melbourne.

As Manager you will be responsible for the day-to-day operations of the pub.

We want The Courthouse to be our ideal version of a pub. That is somewhere which has a warm & welcoming ambience, serves terrific pub food, where genuine hospitality is delivered by staff who are knowledgeable and enjoy what they do.

Your role is to foster and facilitate this environment for both staff and the customers.

Guest experience – genuine hospitality

● Providing a warm, knowledgeable, and genuine hospitality experience to all guests

● Being the face of the business. This involves greeting guests at door (as much as possible), remembering guest names, bit of banter etc.

● Developing a rapport and building relationships with regular and local clientele

● Using the Opentable database (notes section) to record guest details and further personalise our service

● Assist with 'wine' duties on shift – ensuring that appropriate attention, interaction, glassware etc is provided

● Assist with managing reservations diary to ensure smooth running of restaurant, comfort of guests, while maximizing covers

● Ensure functions are set correctly and all staff (kitchen and FOH) are briefed on details

● Liaise with senior Chef on duty at the end of service, ensuring all relevant customer feedback is given

Staff Supervision

● Day to day supervision of staff to ensure we are delivering a warm, genuine and knowledgeable service to guests

● Conduct pre-shift briefings, using this time to train and quiz staff

● Ensure order of service is followed on shift

● Ensure restaurant, bar and bottleshop outlets are set and stocked to standard

● Prepare hotel room guest schedule and monitor housekeeping performance

● Ensuring that the staff levels are adequate to deliver genuine hospitality to all guests.

HR and Training

● New staff training, ensuring checklist is completed

● Ensure staff are notified and trained of any menu changes

● Conduct monthly training sessions

● Provide regular feedback to staff

● Conduct annual performance appraisals for all FOH staff

● Remain positive and actively encourage a warm and friendly team environment

Presentation, Maintenance & Safety:

● Ensure bar and floor is operating under the best systems possible, suggest alternatives and solutions when not

● Ensure all staff are appropriately presented and groomed

● Ensure regular detailed cleaning and maintenance occurs, especially during quiet hours

● Control ambience of building – temperature, music, cleanliness and lighting

Marketing:

● Creating social media posts and stories focusing on company values

Admin & Financial Performance:

● Monitor emails daily - respond to enquiries

● Manage staff levels in order to achieve front of house wage cost not greater than 19% (weekly average)

● Ensure correct cash and credit card handling procedures are undertaken

● Attend and contribute to monthly management meetings

Job Types: Full-time, Permanent
