Think bold Spanish-Iberian flavours, fresh ocean catch, and street food flair served  in a stunning dining room overlooking Bondi Beach, with attitude and sunshine.

The Role:

Sous Chef, responsible for driving improvement in people, product, service and financial performance in the kitchen while supporting the head chef.

Main Accountabilities:

  • Responsible for day to day operations of the kitchen at all times.

  • Responsible for the execution of effective stock management including but not limited to; ordering, receipting, storing (including best practice stock management) and stock rotation.

  • Responsible for effective people practices including, but not limited to, recruitment, onboarding, training, performance management and performance success.

  • Responsible for the effective development (WH&S, technology use, product knowledge, job related task performance) of team members to meet and exceed business objectives through individual and team performance.

  • Responsible for ongoing maintenance of all food offerings and their delivery in the kitchen.

  • Responsible for meeting & implementing Hotel Ravesis standards in kitchen and staff presentation.

  • Responsible for delivering on trend, relevant, seasonal food offering from the kitchen.
  • Responsible for sourcing growth opportunities, activation and delivery.

  • Responsible for menu visibility & website content check to reflect the Hotel Ravesis offer in venue

  • Responsible for ensuring adherence to Hotel Ravesis procedures around Food Safety, including allergen training and food poisoning allegations.

  • Accountable for the legal compliance of the business -in particular, but not limited to adherence to WH&S, Food Safety, including allergen training and food poisoning allegations.

  • Accountable for effective financial management ensuring costs (goods & labour) are managed and sales budgets and profit expectations are met.
