The Role – Sous Chef
As a Sous Chef at Eleven Barrack, you will be second-in-command in the kitchen and an essential bridge between the Head/Executive Chef and the rest of the kitchen team. You will be expected to deliver consistent excellence in food preparation, to lead your team, and to maintain the reputation of Eleven Barrack as one of Sydney's top luxury seafood & steak grills.
Key Responsibilities
- Assist the Head Chef with menu planning and development, especially with respect to woodfired proteins, seafood and seasonal produce.
- Oversee daily kitchen operations: prep, cook, plating & service for all covers (lunch, dinner, functions, private dining).
- Maintain high standards of food quality, consistency, presentation and speed.
- Ensure all dishes leaving the kitchen meet the style, taste and presentation standards of Eleven Barrack.
- Supervise, mentor, train kitchen staff (Chefs de Partie, Demi Chefs, Commis etc.), fostering a positive and professional kitchen culture.
- Manage stock, ordering, waste minimisation, and cost control.
- Ensure kitchen hygiene, safety, food safety regulations are followed (including HACCP etc.).
- Assist in rostering, shift coordination, ensuring adequate staffing coverage.
- Support in special events, degustation evenings, collaborations (e.g. visiting chefs) as required.
What We're Looking For
- Proven experience as a Sous Chef in a high-volume, premium / fine dining / steak & seafood grill environment.
- Strong technical skills: excellent meat & seafood cookery, grill / woodfire techniques
- Passion for local, seasonal produce; knowledge of sourcing, flavour profiles.
- Leadership skills: ability to manage, inspire, supervise kitchen brigade, maintain calm under pressure.
- Excellent organisational and time management skills.
- Strong sense of consistency & quality. Attention to detail.
- Good communication skills. Fluent in English.

Requirements
- Certificate / Diploma in culinary arts or equivalent experience.
