About the Role

Based at our Bairnsdale site, the Development Baker plays a key role in our Innovation Team, turning creative ideas into delicious, scalable products for market launch. In this hands-on, collaborative role, reporting to the Master Baker, your duties and responsibilities will include but not be limited to;

• Develop and commercialise new bakery products through the Stage & Gate innovation process.
• Create and refine recipes that balance taste, texture, quality, and cost efficiency.
• Partner with operations, procurement, and QA teams to ensure smooth product launches and cost-optimised formulations.
• Coordinate and oversee product trials, first production runs, and technical validations.
• Ensure food safety and hygiene standards are upheld to the highest level (HACCP, FSANZ, etc.).
• Support troubleshooting, process improvements, and continuous innovation across the bakery category.
• Represent Patties' passion for quality and creativity during site visits and product tastings.

You'll be instrumental in bringing our next generation of baked favourites to life; from concept to commercial success.

About You

You're a hands-on baker who thrives in an environment that values creativity, collaboration, and continuous improvement. You combine a love of baking with technical expertise and a strong understanding of food manufacturing.

You'll bring:

• 3–5 years' commercial or industrial baking experience with solid knowledge of dough handling, proofing, and baking processes.
• Demonstrated experience in recipe development and product innovation.
• A practical understanding of food safety systems (HACCP, allergen control, hygiene standards).
• Strong analytical, problem-solving, and attention-to-detail skills.
• Excellent communication and teamwork, with the ability to train and support production staff.
• Experience in the FMCG environment or project management will be highly regarded.
