The opportunity

Delaware North Australia is seeking a full-time Head Chef to join our team at Pickett's Deli & Rotisserie, Melbourne Airport.

We're looking for a passionate and experienced culinary leader to take charge of our bustling kitchen. As Head Chef, you'll oversee menu creation, kitchen operations and staff development, ensuring every dish reflects the quality and creativity Scott Pickett is known for. This is your chance to showcase your culinary skills in a fast-paced environment, leading a talented team while delivering exceptional dining experiences for travelers from around the globe.

What will you do?

  • Drive kitchen operations to achieve financial plan, profit margins and business growth
  • Oversee menu planning and design, consistently producing fresh and high-quality food offerings
  • Ensure compliance with HACCP and Food Safety standards across all back of house operations
  • Manage inventory control, COGS and labour costings and profit and loss reporting
  • Recruit, train and develop team members to ensure culinary team success

More about you

  • Experience in a similar role within a restaurant venue
  • Minimum Certificate IV Commercial Cookery
  • Diploma of Hospitality, HACCP Certification & Australian Culinary Federation qualified chef, preferred
  • Extensive experience in menu planning & design
  • Proven ability in managing, developing and motivating a diverse team of chefs and cooks
  • Knowledge of financial and business imperatives
  • Ability to work a 7-day rotating roster
