Are you a hospitality leader ready to take charge of one of Queensland’s most iconic coastal dining destinations? Moreton Hospitality is seeking a Bistro Manager to oversee the Bistro and Functions department at the newly refurbished Stradbroke Island Beach Hotel (SIBH).

This is a rare opportunity to shape standards, service and guest experience from the ground up as the venue relaunches. You’ll own the Bistro operation end-to-end - from daily service and team leadership through to cost control, functions, and guest engagement.

**About the Venue**

Perched above the iconic Cylinder Beach, SIBH is more than a pub - it’s the island’s flagship hospitality precinct. Following a major renovation, the hotel will feature:

- A refreshed Bistro with expansive indoor and outdoor dining
- Four distinct bars and gaming lounge
- Modern function and event facilities
- Guest accommodation
- Three bottle shops across the island

SIBH has always been a cornerstone of the local community and a must-visit for holidaymakers. With its new look and expanded capabilities, it’s set to become one of Queensland’s most exciting venues for dining, entertainment, and coastal escapes.

**Key Responsibilities**

As Bistro Manager, you will:

- Lead daily operations of the Bistro and Functions department, ensuring service runs smoothly and consistently exceeds guest expectations.
- Train, coach and inspire a team of supervisors and floor staff to deliver polished, guest-focused service.
- Oversee functions and events — liaise with the kitchen and events team to ensure seamless planning, set-up, service and guest satisfaction.
- Deliver commercial outcomes by managing labour efficiency, monitoring food and beverage costs, and maintaining accurate financial reporting.
- Ensure service standards are implemented, communicated and maintained across all shifts.
- Foster guest loyalty by building rapport with regulars and delivering memorable dining experiences.
- Maintain presentation and compliance standards across all service areas, ensuring food safety, hygiene, and workplace health and safety obligations are met.
- Collaborate with the General Manager and Head Chef to develop menus, promotions, and strategies that drive revenue and guest satisfaction.

**What We’re Looking For**
- 3+ years’ experience in restaurant, bistro, or function management in a high-volume venue.
- Strong leadership and people management skills, with a proven ability to develop and retain teams.
- Solid understanding of financial levers including labour control, COGS, and variance management.
- Excellent knowledge of food and beverage service standards, with wine and menu knowledge to drive sales.
- Confidence managing both day-to-day service and large-scale functions or events.
- Strong organisational skills and attention to detail.
- Availability to work evenings, weekends, and public holidays.
- A hands-on operator with passion for hospitality and delivering memorable guest experiences.
