Job Title:

Sommeilier and Cellar Specialist

The sommelier and cellar specialist plays a vital part in delivering an exceptional dining and beverage experience for members and their guests, upholding the high standards and traditions of fine wine and hospitality.

Key Responsibilities:

  • Curate and maintain a comprehensive wine list in alignment with seasonal menus, member preferences, and cellar stock, ensuring excellent value and quality.
  • Source and procure wines from reputable suppliers, including rare and vintage selections, while maintaining a thorough knowledge of industry trends, vintages, and producers.
  • Conduct regular stock rotation and ensure proper storage conditions across all cellars, adhering to optimal temperature and humidity requirements.
  • Work closely with the wine committee to maintain and elevate the club's cellar, attending monthly meetings to present reports on wine sales and stock movement.

Service & Member Engagement:

  • Provide expert wine recommendations and food pairings for members during service, showcasing extensive knowledge of wine service standards, pouring, decanting, and pairing expertise.
  • Train and educate service staff on wine service standards, including wine knowledge, tasting techniques, and wine and food pairing principles.
  • Host wine dinners, tastings, and club events such as 'Meet the Winemaker,' fostering engagement and wine appreciation among members through interactive learning experiences.

Cellar Management:

  • Monitor all wine storage areas, ensuring optimal temperature and humidity conditions are maintained, and accurate inventory records are kept using the club's cellar management software.
  • Record and track all inventory transactions, oversee receipt, labeling, cataloguing, and secure storage of all wine deliveries, and ensure accurate reporting of member cellaring services.

Administrative Duties:

  • Prepare wine costings, profit margins, and sales reports for the food and beverage manager, club secretary, and wine committee, utilizing data analysis skills to inform business decisions.
  • Assist in budget forecasting and stocktake reconciliation, providing financial insights to support strategic planning and decision-making.

Requirements:

  • Proven experience as a sommelier or in wine and beverage service at a premium hospitality venue.
  • WSET Level 3 or Court of Master Sommeliers Certification (or working towards).
  • Strong knowledge of international wine regions, varietals, and producers, as well as excellent organizational and cellar management skills.
  • Polished presentation and excellent interpersonal skills, with strong communication, team leadership, and member engagement capabilities.
