About the Role:- We require a chef with a minimum of 2-3 years' experience, strong understanding of traditional Japanese techniques, and a Certificate IV in Commercial Cookery.
- Experience in sushi and sashimi preparation is highly regarded.
Key Responsibilities:
- Assist in daily food preparation and carry out duties as directed by the Executive Chef
- Prepare appropriate food quantities for daily service
- Support production across all kitchen sections, including teppanyaki and sushi counter
- Ensure high standards of food safety and consistent food quality
- Follow recipes and instructions to maintain consistency and efficiency
- Stay up-to-date with new cooking techniques, ingredients, and presentations
- Monitor cleanliness, food wastage, and assist in cost control
- Collaborate with the Executive Chef and Restaurant Manager on daily service needs and special events
- Contribute to menu development and creation of unique, inspiring dishes
- Certificate IV in Commercial Cookery (mandatory)
- Minimum 2 years of proven experience in a similar role within a Japanese or fine dining kitchen
- Experience in sushi, sashimi, and Japanese culinary techniques is essential
- Ability to lead a section of the kitchen independently
- Excellent communication skills (both verbal and written)
- Professional presentation and high standards of hygiene
- Flexibility to work across day and night shifts, including weekends
