We are seeking an exceptional Executive Sous Chef to lead our Flight Catering team at Perth Airport on a full-time basis.

As an integral member of our senior leadership team, you will assist the Executive Chef in delivering our Catering division's objectives by providing operational direction, support and guidance to a team of Chefs and Catering Attendants.

Key Responsibilities:

  • Oversee daily and weekly planning of food preparation, shift allocation and rostering.
  • Manage ordering and purchasing of produce through our systems.
  • Attend business strategy and operational meetings with and in lieu of the Executive Chef.
  • Champion safety and adherence to procedures.

Main Responsibilities Include:

  • Maintaining and delivering world-class airline food quality standards across all classes.
  • Overseeing department planning and execution activities to ensure production targets are achieved.
  • Coordinating labour, resources, materials and equipment to ensure efficient execution of operational plans.
  • Managing all aspects of food catering, including meal presentations, charter catering, menu changes and audits.
  • Focusing on continuous efficiency and productivity improvement.
  • Motivating, mentoring and developing the Kitchen team.
  • Adhering to company HACCP and WHS policies.
  • Waste management and minimizing cost controls.
  • Maintaining all Kitchen staff up to date with required training.
  • Collaborating with wider business to align production operations with overall strategy.

Requirements:

  • Trade qualified with experience min to Sous Chef Level or higher.
  • Exposure to large or bulk catering facilities in manufacturing or FMCG.
  • Strong understanding of HACCP / Food Safety / WHS and QA.
  • Strong verbal and written communication skills.
  • Excellent time and interpersonal management skills.
  • Experience in managing a large cross-functional team.
  • Previous Airline Catering experience is highly desired but not essential.
