Senior Culinary Director Job Description

As a Senior Culinary Director, you will lead and manage all culinary operations across the hotel's restaurants, bars, in-room dining, Meeting & Event spaces. Your goal is to deliver exceptional quality and consistency in every meal served.

  • Develop creative, seasonal menus that reflect local inspiration and global style.
  • Oversee kitchen financials including food cost control, labor planning, inventory, and budget management.
  • Build, train, and inspire a high-performing kitchen team with a focus on development, culture, and excellence.
  • Partner with F&B leadership to deliver seamless guest experiences and standout service.
  • Work closely with marketing, brand teams to support culinary activations, collaborations, and events.
  • Maintain the highest standards of food safety, hygiene, and local health regulations at all times.
  • Collaborate with suppliers and partners to champion sustainability, seasonality, and ethical sourcing.
  • Stay ahead of culinary trends to ensure the hotel remains at the forefront of the local dining scene.

The ideal candidate will have 5-7 years of culinary experience in a high-end or lifestyle setting, with at least 2+ years in a leadership role. Pre-opening and Australian market experience are strong advantages.
