Job Description

Company Overview: Mensho offers a casual, modern Japanese dining experience using the freshest and most sustainable produce wherever possible. The client operates a successful restaurant with a strong reputation in the industry.

Salary: $75,000 plus 11.5% superannuation per annum, depending on experience.

Key Responsibilities:

  • Oversee kitchen operations to achieve consistency and deliver exceptional products and service.
  • Prepare and cook a variety of Japanese dishes, including ramen.
  • Develop and refine menu items, incorporating seasonal ingredients and customer preferences.
  • Manage kitchen staff, ensuring proper training, efficient workflow, and adherence to food safety standards.
  • Monitor quality of dishes at all stages of preparation and presentation.
  • Maintain cleaning schedules for equipment, storage, and work areas.
  • Ensure meals are produced on time, and sufficient quantities are available, as well as ensuring appealing plate presentation.

Requirements:

  • AQF Associate Degree, Advanced Diploma or Diploma (ANZSCO Skill Level 2) in hospitality, with at least 2 years full-time experience as a Chef, particularly in Japanese cuisine.
  • Expertise in Japanese cooking techniques, ingredients, and flavor profiles.
  • Sound knowledge of kitchen management, including Japanese menu planning and costing.
  • Good working knowledge of WHS standards.
  • Highly organized with the ability to supervise and support the team in kitchen operations.
