We are seeking a skilled Culinary Operations Manager to lead our Flight Catering team in Darwin.

As a key member of our management team, you will be responsible for driving food quality, managing menus and specifications, and overseeing daily and weekly planning of food preparation.

  • Develop and implement strategies to drive food quality across all meal classes.
  • Manage menus and specifications for Airline partners, ensuring compliance with client requirements.
  • Oversee the planning and execution of daily and weekly food preparation, including shift allocation and rostering.
  • Monitor flight schedule forecasts and adjust production plans accordingly.
  • Review productivity, processes, and quality, identifying opportunities for improvement and implementing changes as needed.
  • Mentor and develop employees across various roles, promoting a culture of excellence and continuous learning.
  • Ensure delivery of consistent quality food that meets customer specifications, while maintaining HACCP and WHS policies.
  • Support operational, strategic, and project planning goals, collaborating with cross-functional teams to achieve business objectives.
Requirements:
  • Trade-qualified (Cert III) with experience in senior sous or higher roles.
  • Proven experience in large or bulk catering facilities in manufacturing or FMCG, with a strong understanding of lean manufacturing principles.
  • Prior experience in Airline Catering is desirable but not essential.
  • Demonstrated ability to manage diverse cross-functional teams, with excellent verbal and written communication skills.
  • Strong time management and deadline adherence skills, with a focus on delivering results-oriented outcomes.
  • Understanding of HACCP / Food Safety / WHS and QA principles, with a commitment to maintaining high standards of quality and safety.
