Accor is seeking a highly skilled and experienced Executive Sous Chef to join our culinary team at Pullman & Mercure Melbourne Albert Park.


The ideal candidate will have a background in both à la carte and banqueting operations, with a creative approach to menu development and a desire to achieve above the expected.


Key responsibilities include assisting the Executive Chef in daily kitchen operations, overseeing food preparations in the à la carte and banqueting kitchens, and supervising, training, and developing kitchen staff.


The successful candidate will also be responsible for managing inventory, ordering supplies, and minimizing waste to optimize kitchen efficiency.


In addition, they will facilitate and promote a collaborative interdepartmental work environment throughout the hotel.


Qualifications include a strong understanding of seasonal menu creation and design, as well as a solid knowledge of food safety (HACCP) practices.


Proven ability to design and manage efficient staffing schedules, optimize team performance, and efficiently manage stock levels and oversee invoicing processes are also essential.
