Job Description:

We are seeking a highly motivated and experienced Senior Winery Operations Specialist to join our team at Moorilla Estate for a fixed-term contract from early February until just before Christmas.

The successful candidate will be involved in all aspects of winery operations throughout the year, ensuring the production of high-quality wines. Key responsibilities include quality control and preparation of wines for bottle, mentoring through blending, fining and disgorging trials.

Additionally, the candidate will work on and with the bottling, tirage and disgorging lines, setting up, calibrating, maintaining and operating equipment. Under direction, they will perform fruit delivery and processing procedures, assist with sparkling, white and red wine fermentation management, and carry out all cellar operations including additions, stabilities, rackings, transfers and filtration.

The ideal candidate will also assist with lab work throughout the year, manage barrels, and maintain regular cleaning and maintenance of all equipment.

Required Skills and Qualifications:
  • Graduated from a university winemaking program
  • Multiple vintages of winery cellar experience coupled with a passion for high-quality cool-climate wines
  • Career-driven individual with excellent communication skills, positive attitude, and strong work ethic
  • Able to show initiative, work unsupervised and multitask
  • Flexibility during vintage and bottling season work (some longer days may be required)
  • Physically able to work on and around bottling and packaging lines safely, lift crates/boxes, move barriques, puncheons etc
  • Understanding of workplace health and safety and willingness to practice and promote
  • Knowledge of winery machinery and equipment maintenance
  • Holding a current Australian forklift and driver's license
