We are seeking an experienced and innovative Sous Chef to join our team at W Melbourne, a luxurious hotel located in the heart of the city. As a key member of our culinary team, you will be responsible for overseeing kitchen operations, ensuring exceptional quality, and delivering unforgettable dining experiences.

About the Role:

  • Supervise and coordinate activities of the culinary team, maintaining a positive and productive work environment.
  • Determine food presentation, creating visually stunning displays that exceed guest expectations.
  • Monitor food preparation, portion control, and garnish to ensure consistency and high standards.
  • Maintain kitchen logs for food safety programs and monitor stock levels to optimize inventory management.
  • Collaborate with FOH teams to inform menu updates and provide seamless service.
  • Prepare special meals, assist cooks, and provide necessary items to maintain efficiency.
  • Guide and develop staff, including direct reports, to enhance their skills and knowledge.
  • Ensure consistent high-quality products across all kitchen areas.

About You:

  • Prior experience in dynamic restaurant settings, preferably high-end or banquet kitchens.
  • A passion for culinary artistry, innovation, and creativity in the kitchen.
  • Strong leadership skills, proactive demeanor, and ability to inspire excellence in your team.
  • Qualifications in Commercial Cookery III and IV or equivalent.
