Job Opportunity: Lead Culinary Direction

We are seeking an accomplished Executive Chef to lead the culinary direction of a new, two-level venue in Fremantle's iconic Fishing Boat Harbour.

  • Develop and oversee menus for two unique culinary experiences:
  1. Concept 1 - A bold, beer-friendly dining experience celebrating local produce and community spirit.
  2. Concept 2 - A refined, Asian-inspired experience built around a wood-fired grill.

This is a rare opportunity to drive innovation and consistency while collaborating with venue leadership to deliver exceptional dining experiences.

  • Develop and implement menus that reflect each concept's unique identity and audience.
  • Lead, inspire, and manage high-performing kitchen teams.
  • Maintain exceptional food quality, presentation, and consistency across both venues.
  • Manage kitchen operations, supplier relationships, and food safety standards.
  • Collaborate with front-of-house and operations teams to ensure seamless service.
Requirements:
  • Proven experience as an Executive Chef or Senior Head Chef in multi-outlet or concept-driven venues.
  • Strong leadership and team development skills.
  • Deep understanding of modern Australian and Asian cuisine, with a flair for wood-fired cooking.
  • Passion for local ingredients, sustainability, and innovation.
  • Excellent organisational and communication skills.
