Job Opportunity

We are seeking a skilled and passionate Culinary Professional to join our dynamic hotel team at the Manly Pacific ocean-front location.

This exciting role will provide you with the opportunity to work in our unique French/Mediterranean hotel breakfast restaurant, as well as our newly launched Lobby Bar & Rooftop Bar with refurbished swimming pool.

Our talented team is dedicated to creating exceptional dining experiences for our customers through traditional techniques and the finest ingredients with a contemporary flair.

Responsibilities
  • Collaborate with the Executive Chef/Sous Chef to ensure seamless kitchen operations, adhering to established recipes and standards.
  • Supervise the kitchen in the absence of the Executive and Sous Chefs, delegate tasks, and responsibilities to kitchen employees to meet service demands.
  • Lead team members by setting a positive example and maintain excellent presentation standards and cost control for all food and beverage outlets.
  • Ensure strict stock rotation and minimum wastage, and implement and maintain stock control procedures.
  • Work closely with apprentices in the preparation and production of food as required.
Requirements
  • Must have full Australian working rights.
  • Previous experience in the hotel industry in a similar position.
  • Knowledge of food safety requirements, strong product knowledge of menu items and seasonal ingredients, and knowledge of how to operate kitchen equipment safely.
  • Self-motivated and energetic, service-oriented with an eye for detail, and an ability to understand and navigate complex stakeholder environments.
