We are seeking a highly skilled Culinary Leader to join our team. The ideal candidate will have experience running a kitchen section and supporting the Executive Chef with daily food preparation, management, and maintaining culinary excellence.
This role requires strong technical skills, leadership abilities, and a passion for delivering a luxurious dining experience in a fast-paced environment.
The successful candidate will be responsible for preparing, cooking, and plating high-quality dishes according to menu guidelines, overseeing the mise-en-place, freshness, and readiness of assigned kitchen section, and consistently upholding standards for presentation, portioning, and quality of each dish.
Other key responsibilities include supervising, mentoring, and training junior kitchen staff, coordinating with colleagues and other sections to ensure smooth service, managing inventory, ordering, and stock rotation in assigned section, and practicing and enforcing outstanding hygiene, food safety (HACCP), and OH&S protocols.
Requirements- A Certificate III in Commercial Cookery or equivalent is required.
- A minimum of 2-3 years experience as a Senior Cook or equivalent is essential.
- Flexibility to work across a rotating roster including mornings, evenings, weekends, and public holidays is necessary.
- A passion for learning and developing within the hospitality industry is desirable.
- Strong communication and interpersonal skills are essential.
- Proven experience working across different cooking styles and preparation techniques is preferred.
