The Head Chef is a key member of our culinary team, responsible for ensuring the smooth operation of our catering production across the residence. This includes managing back-of-house operations, such as ordering, food preparation, and delivery, as well as overseeing the management of cooks and back-of-house teams.
Key Responsibilities- Develop and implement menus that cater to the diverse needs and preferences of our residents, ensuring a high level of quality and nutrition.
- Collaborate with our Lifestyle team to conduct food focus groups and gather feedback from residents to inform menu planning.
- Manage the ordering and inventory of catering supplies, ensuring that they are procured within budget parameters.
- Maintain accurate records of resident food preferences and dietary restrictions, and ensure that meals are prepared and served accordingly.
- Ensure compliance with food safety and hygiene standards, and maintain a clean and safe kitchen environment.
- Cater for external functions and events as required.
- Hold a post-secondary qualification in catering, cooking, or a related field.
- Hold a Food Safety Supervisor qualification (HLTFSE,001, 005, 007).
- Have experience working in catering in a residential aged care facility (desirable).
- Be able to manage staff, including rostering and conflict resolution.
- Have knowledge of food safety plans and HACCP compliance.
