As a key member of our finance team, the Cost Controller plays a crucial role in ensuring that the goods and services produced by the hotel are of the best value while maintaining a high degree of quality and reasonable quantities.

Key Responsibilities:

  • Maintaining optimal product ordering processes to align with our financial cycles.
  • Negotiating and maintaining professional relationships with suitable suppliers.
  • Developing and reviewing a competitive quote file for all products on a quarterly basis.
  • Conducting weekly bar stocktakes (if required) and distributing reports.
  • Organising and performing monthly stock takes and calculating the cost of sales for both food and beverage products.
  • Performing potential analysis and comparing against usage.
  • Ensuring compliance with established hotel policies regarding product requisitioning and delivery.
  • Attending scheduled meetings.
  • Complying with all established Hotel policies and procedures as outlined in the Team Handbook.
  • Assisting the F&B Manager in forming menus to optimise revenues while maximising margins and controlling food cost of sales.

  • Able to work independently and as part of a team.
  • Excellent communication and negotiation skills.
  • Ability to multitask and prioritise tasks effectively.
