Job Description:\

As a Cost Controller, you will be responsible for ensuring the hotel's goods and services are optimized in terms of price, quality, and quantity.

\

The goal is to provide accurate and timely reporting of all goods consumed and held on premises, as well as optimize beverage and food cost percentages.

\

This role requires close collaboration with the Purchasing Manager, Food and Beverage Manager, and Executive Chef to ensure seamless product requisitioning and delivery processes.

\Key Accountabilities:\

  • Reports to the Purchasing Manager\
  • Establishes and maintains procedures for timely ordering of products in relation to the hotel's financial cycles\
  • Ensures all products purchased are properly stored, with adequate quantities and par levels maintained for each item\
  • Negotiates and maintains professional relationships with suitable suppliers\
  • Maintains a competitive quote file for all Hotel products, reviewing it quarterly\
  • Ensures all purchased products are authorized in accordance with established hotel policies and procedures\
  • Verifies invoices are received for goods purchased, attached to corresponding purchase orders\
  • Checks and distributes Daily Food & Beverage Tracker Spreadsheet (purchases vs revenue)\
  • Checks and approves invoices in Coupa\
  • Analyzes weekly bar stocktake (if required) and distributes report\
  • Processes all irregular purchases with the required number of competitive quotes\
  • Organizes and performs monthly stock takes, calculating cost of sales for both food and beverage products\
  • Performs potential analysis and compares against usage\
  • Accepts all deliveries from suppliers in line with hotel policies and procedures\
  • Delivers internal requisitions to all areas of the hotel when needed\
  • Assists the F&B Manager in menu formation for optimizing revenues while maximizing margins and controlling food cost of sales\
  • Ensures all established hotel policies are followed regarding product requisitioning and delivering\
  • Attends all scheduled meetings\
  • Complies with all established Hotel policies and procedures as outlined in the Team Handbook\
  • Performs any other duties directed by the Financial Controller, Food and Beverage manager, Purchasing manager, and Executive Chef\
