We provide vital workplace support for people working in some of the most isolated terrains in the world, from oil rigs in the North Sea to gold mines in the Australian Outback.You will be based in regional NSW working on our remote mine site village14 days on 7 days off, 10 hour days, salary of $110,000Full time permanent employmentFIFO from Sydney, Melbourne or BrisbaneThe Position:Lead all kitchen operations for breakfast, crib & dinner service providing a buffet style serviceManage & mentor a team of chefs, kitchen hands & dining room staffOversee stock control, ordering & food safety complianceEnsure food is always prepared to a high standardEnsure OH&S compliance, adhering to safe work practices & procedures.Ensure all catering controls are in place, & wastage is kept to a minimum.Maintain high standards of food hygiene, safety, infection control & cleanliness in accordance with Compass standards.Enhance workplace culture - display high levels of customer service, contribute ideas & be flexible to meet the needs of the business.The Person:Cert III in Commercial Cookery - MinimumMust be reliable, strong & capable of leading a teamProven experience as a head chef or sous chef in mining or remote settingsExcellent communication & leadership skillsExperience within bulk catering/ cooking environmentsExcellent knowledge of all kitchen procedures & operationsExperience in menu writing, stock control, budgets, rostering, staff mentoring, training &liaising with the client.Experience with hygienic work practices and appropriate HACCP guidelinesA proactive leader who is professional, positive, supportive, & motivated with experience in training, and developing a team of hospitality professionalsThe Benefits:You will have the support, infrastructure, systems and processes you would expect from a global organisation.
