EXECUTIVE CHEF, Gemelli Group

We're on the lookout for a passionate and experienced Group Executive Chef to lead the culinary direction of Gemelli Italian , one of Queensland's most loved restaurant groups.

About the Role

You'll oversee kitchen operations across all 5 Gemelli venues across the Gold Coast and Brisbane , leading menu development, driving consistency, and upholding the standards that define our brand.

This is a hands-on leadership role, perfect for a chef who thrives on both the creative and operational sides of the kitchen.

Your key responsibilities:

• Lead, mentor, and support Head Chefs and kitchen teams across all Gemelli venues
• Oversee menu development and seasonal menu changes, ensuring alignment with our Italian heritage and high standards
• Implement and monitor new procedures for cost and labour control across all kitchens
• Drive food quality, presentation, consistency, and profitability
• Manage kitchen budgets, cost of goods, labour costs, and financial performance
• Maintain strong relationships with local producers and suppliers
• Ensure full compliance with food safety and hygiene standards
• Oversee recruitment, training, and development of kitchen staff
• Collaborate with venue managers and owners to deliver consistency across the group
• Manage kitchen maintenance

What you'll bring:

• Proven experience as an Executive or Group Chef within a multi-site or high-volume restaurant environment
• A minimum of 4-5 years of Executive or Group Chef experience in a multi-site or high-volume restaurant group
• ROSTOKE experience preferred but not essential
• Strong leadership and mentoring abilities, with excellent communication skills
• A hands-on approach you lead from the front and inspire your team
• Strong financial acumen and proven ability to control costs and achieve targets
• P&L management experience is preferred but we are flexible for the right candidate with strong operational skills
• Experience implementing systems and procedures that improve efficiency and profitability
• Creative flair with a respect for authentic Italian cuisine
• Italian cuisine experience is essential with a deep understanding of authentic Italian cooking techniques and ingredients
• Calm, adaptable, and solutions-driven mindset
• Must have own car – fuel costs covered by the company
• Experience with systems such as Tanda, Restoke (or similar)
