About the role
We are seeking an experienced and talented Head Chef to join our team at the new Phoenix Brasserie in West Perth, Western Australia. As our Head Chef, you will be responsible for overseeing all culinary operations and leading a team of skilled chefs to deliver an exceptional dining experience for our customers. This is a full-time, hands-on position, with opportunities for career progression within our growing organisation.
What you'll be doing
- Develop and implement creative, high-quality menus that showcase your culinary expertise
- Manage and mentor a team of chefs, ensuring consistent food preparation and presentation
- Oversee kitchen operations, including inventory management, budgeting, and cost control
- Develop excellent supplier relationships ensuring highest quality produce within cost effective perimeters
- A strong understanding of Breakfast, lunch and dinner operations including all day dining and classic afternoon teas, functions and specialty dinners
- Ensure compliance with all food safety and hygiene to Phoenix Brasserie and regulatory highest standards
- Recruit a positive and collaborative high performance team including training young chefs and encouraging individuals to advance their skills in multiple areas of the kitchen
- Liaise with front-of-house staff to ensure seamless service delivery
- Continuously seek opportunities to improve efficiency and enhance the customer experience
What we're looking for
- Minimum of 5 years' experience as a Head Chef or Sous Chef in a reputable restaurant or hospitality establishment
- Formal Commercial Cookery Qualification and Food Handling and supervisory Food Handling Certification
- Must be a permanent Australian Resident or Citizen. Must have full working rights in Australia. No sponsorship available
- Successful candidates must pass a National Police Check
- Proven track record of creating innovative and traditional, high-quality menus and managing a team of chefs and kitchen staff
- Strong knowledge of food safety regulations and kitchen operation
- Excellent time management and multitasking skills
- Ability to work collaboratively with the owner, front-of-house management and other departments
- Passion for using fresh, high-quality ingredients and a commitment to sustainable practices
- Strong leadership and mentorship skills to develop and inspire your team
- Ability to remain calm and professional under pressure and have a positive can do attitude
- Must be flexible with working day and night times as this is a demanding role that requires regular weekend and multi dining session availability
