We are looking for an experienced and detail-oriented Pastry Cook to take on the crucial role of producing our restaurant's renowned Dim Sum and pastry items. You will be a key member of our culinary team, responsible for crafting a wide range of items from scratch and ensuring every product meets our high standards. The ideal candidate will possess a strong technical foundation in pastry and a genuine passion for the art of Chinese Dim Sum.

As our Pastry Cook, you will be expected to:

  • Plan and manage daily production schedules to meet service demands, ensuring a consistent supply of fresh items, particularly during peak Yum Cha service.
  • Prepare a wide variety of specialised doughs and pastries from basic ingredients, including laminated and flaky pastries, yeast-leavened doughs for steaming and baking, and delicate hot-water or starch-based doughs.
  • Meticulously create and mix a range of sweet and savoury fillings according to our traditional recipes, ensuring exceptional taste and quality.
  • Expertly shape, finish, and cook a diverse menu of Dim Sum items using precise hand-crafting techniques and various cooking methods, including steaming, baking, and frying.
  • Conduct rigorous quality checks on all finished products to guarantee they consistently meet the restaurant's standards for flavour, texture, and presentation.
  • Collaborate with the Head Chef to develop and test new and seasonal pastry items, blending traditional techniques with modern creativity.
  • Uphold the highest standards of food safety by strictly adhering to Australian Food Safety Standards and internal hygiene protocols.
  • Maintain a clean, organised, and efficient pastry section, taking responsibility for the proper care and maintenance of all specialised equipment and tools.
  • Assist in managing the inventory for the pastry station, applying the FIFO (First-In, First-Out) principle and helping to minimise waste to control ingredient costs.

Candidate Requirements:

  • A minimum of one year's practical experience as a Pastry Cook, or in a similar role within a restaurant or hotel environment.
  • A minimum qualification of Certificate IV in Patisserie (or equivalent) is required.
  • A clear understanding and working knowledge of Australian Work Health and Safety and food safety regulations.
  • Exceptional attention to detail and a commitment to producing high-quality work.
  • The ability to work efficiently and calmly in a fast-paced kitchen environment.
  • Strong teamwork and communication skills.
  • A genuine passion for Cantonese cuisine and Dim Sum culture is highly desirable.
