We're searching for a Head Bartender to take the lead. Someone who can balance creativity with consistency, deliver drinks that impress and keep the team sharp, fast and connected through every service. Your chance to shape one of Melbourne's newest rooftop bars from day one.

Step off King and Flinders Street and into something familiar yet entirely unexpected at The Waterside Hotel. Above it all, Past/Port Rooftop is where skyline views meet bold flavour and a sense of adventure.

We're searching for a Head Bartender to take the lead. Someone who can balance creativity with consistency, deliver drinks that impress and keep the team sharp, fast and connected through every service.

What you'll do

  • Lead bar service with skill, speed and attention to detail
  • Confidently delivering both timeless classics and curated cocktails
  • Support, train and motivate bartenders and barbacks
  • Work closely with the floor team to deliver seamless service
  • Build rapport with guests, creating experiences they'll remember

What you'll bring

  • Strong experience in a high-volume cocktail environment
  • Solid knowledge of spirits, cocktails and wine
  • Leadership skills with the ability to guide and inspire a team
  • Reliability, organisation and professionalism under pressure
  • Consistency and great attention to detail
  • Valid RSA & DoFoodSafely certificates
  • Flexibility across nights, weekends and late finishes
