Liquid & Larder Management venues, Bistecca, The Gidley, Lottie and Bar Julius are looking for chefs of all levels to join our teams.

The Venues

The Gidley, found in Sydney's CBD on the corner of King and Elizabeth, is an opulent steak house, where fine dining meets semi-respectable displays of gluttony.

As our guests step inside and make their way down dimly lit stairs to the Lounge Bar, an intimate haven of plush furnishings and quiet corners. As their table's being prepared, guests can enjoy old-school charm with your favourite stiff drink before taking a seat in the lavish Dining Room. Here, is where guests sink their fork into prime cuts and sip on juicy reds while allowing the jovial spirit of golden-age hospitality to unfold around them.

The Bistecca experience begins by pulling up a stool or a candle-lit table in the old-world, wood-panelled cocktail bar, stocked with amaro from across the world, including our Four Pillars classic Negroni. Moving into the intimate 50-seat restaurant, you're greeted by refined Tuscan hospitality. From the table, take in our famous Bistecca butcher's block and open hearth, which fills the dining room with timeless warmth. The space then flows to a bottle-lined enoteca (wine room) available for private dining.

Atop The EVE's lush rooftop oasis is Lottie, a contemporary Mexican restaurant showcasing menus crafted with fresh Australian produce. At Lottie, we believe wine should be an experience—vibrant, expressive, and harmoniously matched with the bold, rich flavours of Mexican cuisine. Our wine list celebrates both tradition and innovation, offering selections that elevate the essence of our menu.

Bar Julius, The EVE's European-inspired lobby bar, serves as a welcoming and vibrant hub, catering to every taste. Open early and up late, Bar Julius offers everything from caffeine to cocktails, paired with all-day bistro classics. The thoughtfully curated wine list reflects the elegance and diversity of Europe's renowned wine regions, while also highlighting New World classics. It's the perfect place to settle in and reset.

About the Roles

Prior experience in a bustling, energetic kitchen is preferred, along with a keen eye for detail to ensure the consistent quality of our offerings.
