As Sous Chef you will be a key leader in the kitchen, supporting the Executive chef in delivering exceptional food across multiple outlets.

You will help drive consistency, creativity and team culture, ensuring that every plate reflects the Trawool Estate philosophy of great seasonal food.

Key responsibilities include:

  • support the executive chef in day to day operations across all venues (restaurant, bar, events)
  • Lead, train and motivate other kitchen staff.
  • Uphold high standards of food presentation, flavour and quality.
  • Collaborate on menu development that highlights estate grown produce and local suppliers.
  • Manage stock control, ordering and waste minimisation.
  • Ensure compliance with all food safety, hygiene and workplace health standards.

The correct candidate must have:

  • Proven Sous chef or Senior CDP experience.
  • Be a calm, positive leader with great communication skills.
  • Passion for regional, sustainable and seasonal cooking.
  • Flexibility to work across a variety of service styles (a la carte, events, banquets)

Job Type: Full-time

Pay: $75,000.00 – $85,000.00 per year
