Biànca was born out of a desire to bring the spirit of Italian dining to Brisbane's Fortitude Valley, capturing the effervescence of a classic trattoria within a sleek, warm, and colourful setting. The food focuses on perfecting classic Italian dishes, made in-house with fresh, seasonal produce. The Role

Biànca is seeking a passionate and knowledgeable Assistant Sommelier to support the wine program at our vibrant Italian restaurant. In this role, you will support the Head Sommelier in maintaining the wine program, with a strong focus on administration and daily operations. Key responsibilities include managing stock levels, handling orders and invoices, maintaining cellar organisation, and ensuring wine systems are up to date. You will also be active on the floor, delivering thoughtful wine service and mentoring junior team members.

  • Experience in wine service within a quality-driven or high-volume dining venue
  • WSET Level 2 certification is required; WSET Level 3 is highly regarded
  • Confidence in guiding guests through the wine list and offering thoughtful pairing suggestions
  • Strong communication and a calm, guest-focused presence on the floor
  • Collaborative mindset and ability to support the wider floor team
  • Passion for wine, regional styles and the stories behind producers
  • RSA Certificate
  • Availability to work evenings and weekends
