**You**:
As our Head Sommelier, you will lead a team of passionate wine enthusiasts and shape the wine program with your expertise and vision. Your role involves curating and maintaining an exceptional wine list that showcases diverse varietals and highlights unique terroirs, enhancing the dining experience for our guests.

You will oversee inventory control, staff training on wine service, and ensure impeccable standards of wine presentation and service. This role provides the opportunity to lead the restaurant team from the front to create a memorable, authentic, and exceptional dining experience that supports the core values and mission of Evra.

**Key Responsibilities**:

- Curate and manage a diverse wine program, catering to varying tastes and preferences.
- Maintain and update an extensive wine list, ensuring it reflects current trends and offers a balanced selection.
- Oversee inventory control and procurement of wines, ensuring optimal stock levels.
- Train and develop staff on wine knowledge and service skills.
- Engage with guests, providing information confidently and professionally, and answering beverage questions.
- Ensure impeccable standards of wine presentation and service.

**Requirements**:

- Proven experience as a Sommelier in a high-end dining establishment.
- Demonstrated expertise in curating and managing a diverse wine program.
- Management experience in a high-end, premium fine dining restaurant.
- Ability to listen, recommend, and talk all things beverages.
- Experience in staff training and development, with a focus on enhancing wine knowledge and service skills.

- Assist the Venue Manager in creating a restaurant experience that makes every guest want to return.
- Curate a beverage program that is both profitable and over-delivering.
- Ensure opening, preparation, service, and closing standards of the restaurant adhere to company brand standards and policy.
- Provide honest and open performance feedback to your team, supporting them to do better.
- Monitor, coach, and support your team with passion and fun.
- Encourage individuality, innovation, and initiative in your team members.

**Rooftop Urban Farm**:
Evra's rooftop urban farm is located on the highest level of TotalFusion Platinum (TFP), which stands as Australia's largest health, wellness, and fitness precinct. Encompassing nearly 2000sqm, our farm is home to approximately 40 crop variations, chickens to help with natural fertilisation, a bee colony for pollination, and a worm farm and composting for food scraps.
