About Milan on Main

Milan on Main is one of Main Beach's most loved Italian restaurants — celebrated for its authentic flavours, premium ingredients, and warm, welcoming atmosphere. Our menu combines classic Italian dishes with modern flair, all crafted with passion and precision.

We're now looking for a Head Chef to lead our kitchen team and help take Milan on Main into its next exciting chapter.


The Role

As Head Chef, you'll oversee all aspects of kitchen operations — from creative menu design to daily service execution. You'll bring leadership, consistency, and passion to every plate while ensuring a smooth, efficient, and high-performing kitchen.

Key Responsibilities:

  • Menu leadership: Design authentic Italian menus, develop new dishes and recipes, and guarantee consistent quality, flavour and presentation.
  • Kitchen operations: Oversee daily service, manage workflow and pass, assign sections, and ensure timely execution during peak periods.
  • People management: Recruit, train, roster and mentor kitchen staff; foster a calm, supportive and accountable team culture.
  • Inventory & procurement: Control stock levels, place orders, manage supplier relationships, minimise waste and maintain targeted food costs.
  • Standards & compliance: Uphold stringent food safety, health and hygiene standards; ensure equipment care, maintenance and compliance with HACCP standards.
  • Financial stewardship: Manage kitchen budgets, track costs and margins, and collaborate closely with management to drive menu and business performance

About You

You're a hands-on chef who loves authentic Italian food and thrives in a busy, dynamic environment. You're a natural leader who brings creativity, professionalism, and pride to your craft.

You'll Bring:

  • 3–5 years' experience as a Head Chef or Senior Sous Chef in a quality restaurant
  • Strong background in Italian cuisine — pasta, seafood, meats, and desserts
  • Proven ability to manage food costs and kitchen budgets
  • Exceptional leadership and communication skills
  • Calm under pressure, organised, and solutions-focused
  • Current Food Safety Supervisor Certificate
