Moon Dog has been bringing our really bloody fun & unique brand of hospitality to the Marvel Stadium concourse since November 2024, where we offer the very best in food, beverages and entertainment to punters from near and far. 'Doglands' consists of a large (1500 pax) event space – that is open for Marvel event & game days and private functions – as well as a 70 pax restaurant/bar 'The Jungle Room' that is open 7 days a week, offering an elevated dining experience for lunch and diner.

We're seeking an experienced Head Chef to take the reins in our large, well kitted-out, new kitchen. You will help to lead our kitchen team in smashing out delicious elevated dishes in the restaurant, pub classics on Marvel event days, and function food for functions. A natural leader with experience in fast-paced, large kitchens, you will hustle to make Moon Dog Doglands one of the best places to work & eat in the city The ideal candidate will have several years proven experience in similar roles (large, pumping, pub-like venues) and take great pride in what they do.

Working closely with the Exec Chef (based on site), the Sous Chef & Venue Manager, you will be responsible for:

  • Ensuring quality food across the entire venue for regular service and functions
  • Managing food costs and meeting budgets
  • Food Safety and OH&S
  • Contributing to menu development and designing special seasonal offerings
  • Ordering and management of food, including checking quantity and quality of products received
  • Monitoring and maintenance of stock
  • Working closely with key managers to develop a high standard of communication and collaborative problem solving.
  • Setting production schedules and staff requirements necessary to ensure timely delivery of service and coverage.
  • Hiring, training and development of kitchen team
  • Manage the preparation of Moon Dog some core menu and function food items for multiple venues across the group ensuring the highest food and quality standards are maintained.
  • Work with our other Head Chefs and Exec Chef to ensure top-quality and timely group food prep
