About the Role:
The Restaurant Manager of the Lion Hotel reports to the Venue Manager and is responsible for the overview of the hotel's food operations. This includes setting customer service standards, staff recruitment, induction and training, performance management of staff, rostering, wage targets, financial targets, ensuring adherence to hotel policies and procedures, compliance with WH&S, and ensuring bistro and dining areas are maintained in a well-presented manner.
Key Responsibilities:
- Develop and deliver training programs, including induction, mentoring, and ongoing development for all floor staff to ensure consistency and high service standards.
- Recruit, onboard, and directly manage floor staff, including supervision, performance management, and disciplinary processes.
- Educate front-of-house staff on menu items, dietary requirements, and ensure timely communication of product or service changes.
- Provide clear communication with staff, oversee smooth day-to-day floor operations, and ensure consistent staffing and supervision across all shifts.
- Maintain and update POS systems, manage user logins, ensure correct usage, and keep usability efficient and aligned with hotel policies.
- Monitor meal quality and consistency, collaborate with the Head Chef on monthly reviews, and contribute to the creation of seasonal menus aligned with customer expectations.
- Ensure adherence to hygiene, WH&S, liquor licensing, cash handling, stock control, and all hotel policies and procedures.
- Manage wage budgets, food and wine revenue targets, and cost parameters, while implementing cost-saving initiatives to improve profitability.
- Drive business performance through revenue targets, profit opportunities, seasonal activations, and innovative service enhancements.
- Uphold sustainable business practices and ensure alignment with company values in daily operations.
- Contribute content ideas and material for social media and member communications to promote the venue and bar space.
- Rotate through Duty Manager shifts, ensuring smooth operations and execution of leadership responsibilities across the venue.
About you:
- At least a diploma or above in hospitality management;
- At least three years' work experience in the role;
- RSA and RP qualifications;
- Extensive experience in managing a restaurant team that is driven to succeed and is thirsty for knowledge;
- A passion for sustainability, local produce and an interest in current trends;
- Be well organised and able to work under pressure and meet deadlines;
- Excellent written skills, well-presented and have great communication skills;
- Attention to detail with an eye for presentation and quality;
- Ability to communicate effectively with a wide range of people (suppliers, customers, employees, Managers);
- The ability to analyse situations and make rational and responsible decisions relating to staffing and strategic business issues;
- Able to accept significant levels of responsibility and accountability;
- Ability to train, motivate and counsel staff in relation to performance issues; and
- Ability to build relationships with clients and develop loyalty to the brand.
