About the Roles:

We are seeking talented and motivated Senior Sous Chef and Sous Chef professionals to join our culinary leadership team at The Lakes Hotel.

The Sous Chef role requires prior experience at this level, with proven ability to supervise the kitchen in the absence of senior management, lead a section, support kitchen operations, and maintain high food quality.

The Senior Sous Chef role is a perfect step up for an experienced Sous Chef ready to take on broader responsibility and leadership within a fast-paced, high-volume venue.

Both roles report directly to the Executive Chef, and you'll play a key part in menu execution, team mentoring, and ensuring every dish reflects The Lakes' coastal-inspired dining experience.

Key Responsibilities:

  • Lead and oversee kitchen operations and ensure consistent food quality
  • Support menu development and execution
  • Mentor and guide junior chefs and kitchen staff
  • Maintain high standards of hygiene, presentation, and safety
  • Assist in stock control, ordering, and cost management

About You:

  • Proven experience as a Sous Chef (Senior Sous Chef applicants will have extensive Sous Chef experience)
  • Strong leadership and team supervision skills
  • Ability to thrive in a fast-paced, high-volume environment
  • Passion for coastal-inspired cuisine and attention to detail
  • Full working rights in Australia required (sponsorship not available at this stage)
