Key Responsibilities:

Assist in overseeing daily operations of the pastry section, ensuring smooth service and high-quality production.
Lead and inspire the pastry team, providing guidance, mentorship, and training to junior staff.
Work closely with the Executive Chef to develop and execute the seasonal menu, with a focus on traditional Portuguese pastries and innovative new offerings.
Prepare, bake, and decorate a variety of pastries, including tarts, cakes, custards, and traditional Portuguese desserts like Pastéis de Nata (Portuguese Tarts).
Manage inventory, ensuring all ingredients are stocked and that we adhere to food safety standards.
Monitor and maintain kitchen hygiene, cleanliness, and safety protocols in line with Australian regulations.
Ensure all pastries are consistently produced to the highest quality standards.
Collaborate with the front-of-house team to ensure a smooth and efficient service.
Required Skills & Experience:

At least 5 years of experience in pastry, ideally in a high-end patisserie or bakery setting.
Expertise in traditional and modern pastry techniques, with an understanding of Portuguese dessert specialities.
Strong leadership skills, with the ability to manage and motivate a team in a fast-paced kitchen environment.
Proven ability to maintain high standards of quality, consistency, and presentation under pressure.
Excellent time management and organisational skills.
Working rights in Australia and located in Sydney (essential).
