About the role

We are seeking an experienced Chef/Lead Cook to join one of our nursing homes in Thornleigh, NSW. This role will be responsible for taking the lead, supervising and coordinating the catering team of the facility. This role will provide catering services to meet the identified dietary needs of residents. The Lead Cook will be responsible for managing the operation of the kitchen including food production, supplies, presentation/service and record management and complying with the quality and food safety standards.

Main Responsibilities

  • Direct and supervise catering staff in all activities complying with HACCP Guidelines.
  • Supervise and instruct catering staff members in the use of equipment and giving help and guidance where appropriate.
  • Participate in the planning and review of menus as required.
  • Prepare meals according to the menu in a timely manner.
  • Ensure all meals are of the highest possible quality and attractive presented.
  • Ensure all food items are stored and handled according to regulatory requirements.
  • Enable residents to enjoy culturally appropriate meals and dietary preference and religious observance.

Skills & Experiences required:

Essential:

  • Minimum 5 years' experience as an In charge Cook/Chef and be able to meet the catering requirement for aged care.
  • Strong knowledge of Food Safety Program, and experience in the Food Safety Audit.
  • National Police Clearance.
  • Experienced in Chinese cuisine.
  • Australian Citizenship / Permanent Residency.
  • Evidence of a good team building, interpersonal and communication skills.
  • Good command in English and/or Chinese and able to write reports
  • Demonstrated knowledge and application of WHS, EEO and anti-discrimination legislative requirements.

Desirable:

  • Understanding of Strengthened Aged Care Standard
  • Experience as a Cook in aged care will be highly regarded
  • Attained Certificate III/IV in Commercial Cookery
  • Experience working with culturally and Linguistically Diverse populations is an advantage
