About Us: Sushi Hiro is a popular Japanese restaurant located at beautiful Narrabeen Beach. We specialise in authentic sushi, sashimi, and Japanese hot dishes prepared with the finest ingredients. We are looking for a skilled and experienced Chef to join our friendly team and contribute to our high culinary standards.

Position Summary: The Chef will be responsible for preparing, cooking, and presenting high-quality Japanese dishes, including sushi, sashimi, rolls, and hot kitchen items. The ideal candidate will have a strong background in Japanese cuisine, attention to detail, and the ability to work efficiently in a fast-paced environment.

Main Duties:

  • Prepare and cook a variety of Japanese dishes, including sushi, sashimi, nigiri, rolls, and hot foods.
  • Ensure consistency in taste, presentation, and quality of dishes.
  • Maintain kitchen hygiene, safety, and cleanliness in accordance with food safety standards.
  • Manage stock levels, monitor ingredient freshness, and assist in ordering supplies.
  • Work collaboratively with the kitchen and front-of-house team to ensure smooth service.
  • Train and supervise kitchen staff when required.
  • Adhere to restaurant policies and maintain a professional work environment.

Skills and Experience Required:

  • Minimum 3 years of experience as a chef (preferably in Japanese cuisine).
  • Strong skills in fish cutting, sushi and nigiri preparation, and roll making.
  • Experience in hot kitchen cooking (e.g., tempura, donburi, teriyaki, etc.).
  • Good understanding of food safety and kitchen operations.
  • Ability to work under pressure and handle busy service periods.
  • Reliable, punctual, and able to work in a team environment.

Qualifications:

  • Certificate IV or Diploma or higher in Commercial Cookery (or equivalent).
  • Relevant work experience in a Japanese or Asian restaurant.

Salary: $70,000 – $80,000 per annum plus superannuation (depending on experience).
